Mushroom and Smoked Mozzarella
& Smoked Salmon and Cream Cheese Pizzas

      "Topped with a deconstructed omelet, this pizza, from Top Chef's Mike Isabella's restaurant Graffiato, is a fun new way to feed the morning crowd."


      1/2 pound smoked mozzarella
      2 cups mushrooms
      8 eggs
      1 tsp. salt
      1 Tbsp. extra-virgin olive oil


      Arrange thinly sliced smoked mozzarella on dough, then arrange the cleaned and sliced mixed mushrooms on top. Bake at 450F until crust is golden brown. Meanwhile, scramble eggs. Remove pizza from oven and top with scrambled eggs, salt, and olive oil.

      Total time: 12-15 minutes

      "Topped with traditional bagel fixings, this pizza, from Top Chef contestant Mike Isabella's new restaurant, Graffiato, is a fun new way to feed the morning crowd."


      1 cup grated Parmesan cheese
      1/2 cup extra-virgin olive oil
      1 1/2 tsp. salt
      3 cups total fresh dill, mint, and parsley leaves, mixed
      8 oz. cream cheese
      8 oz. sliced smoked salmon
      2 Tbsp. capers
      1/4 tsp. ground black pepper


      Bake the crust until golden brown, 12 to 15 minutes. Meanwhile, in a blender or food processor, puree grated Parmesan cheese, extra-virgin olive oil, salt, and a mixture of fresh dill, mint, and parsley leaves until smooth. Remove the pizza from the oven; layer the cream cheese, the herb puree and the smoked salmon on the crust. Top the pizza with capers and ground black pepper.

      Total time: 30 minutes
